Delicious Desserts: Super Quick Applesauce


Ingredients

1 stick butter
4 gala apples, peeled and cored, cut into 1/2-inch pieces and tossed with juice from half of a 1/2 lemon
1/2 lemon, juiced
1 cup apple cider
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon allspice
1/8 teaspoon ginger
1 teaspoon vanilla

Directions

Melt the butter in a large saute pan over medium heat.


Do not allow the butter to brown.  Add apple cider to the butter. 


Add the apples to the butter-cider mixture, and  stir to coat.


Add the lemon juice, apple cider, spices, and vanilla.


Cook until the apples have softened and the cider has reduced by half and becomes a thick syrup.


Pour the apple mixture into a food processor and blend into a smooth apple puree. Refrigerate until read to use.
